[......] What’s the difference between Brut, Extra dry and Dry version of the Prosecco DOC?

In the BRUT version, the refermentation is conducted towards the end so that the sparkling becomes drier (reducing sugar content max 15 gr./litre). It defines itself as a refined sparkling wine with a light straw-like colour, an elegant floral bouquet and harmonious dry flavour. The fine perlage assures a persistence of the flavour and a clean palate.

In the EXTRA DRY version, the refermentation is interrupted when there remains a small percentage of sugar (12-20 gr./litre). It’s the classic version that combines the aromatic variety with the sapidity exalted by the bubbles. It has a clear straw-colour revived from the perlage. The aroma is fresh and rich of a fruity fragrance, apple, with a trace of citrus fruit, which shades off in floral.

The DRY (reducing sugar content 17-35gr./litre) is more pleasant than the Extra Dry and is particularly suited for the Prosecco Superiore di Cartizze DOC.
