[.........] Which are the main points that regulate the production of Prosecco of Valdobbiadene D.O.C. wine?
Five are the fundamental rules to obtain the denomination "Prosecco di Valdobbiadene DOC":
1. THE GRAPES: by law must derive from the vines of the delimited area and registered at the Chamber of Commerce, where the cadastral files can identify them
2. THE VARIETY: at present only the Prosecco grapes are admitted. The vineyards can be made up of vines of Verdiso, Perera, Bianchetta for a max of 10%
3. THE VINIFICATION: must follow the disciplinary rules and must be carried out only within DOC towns. The vinification of Cartizze must only be carried out within Valdobbiadene.
4. THE BOTTLING AND SPARKLING PROCESS: the process can only be done within the wineries of Treviso Province
5. MARKETING: before bottling, every lot of wine must pass the organoleptic test carried out by the oenologist commission of the Chamber of Commerce.
